1 cup brown soft sugar
2 large eggs
1 cup corn
125 gr. melted chocolate in bain marie
2 cups flour self-rising
100 gr. chocolate drops
For the cream and decoration
400gr. cream cheese
5 tsp. tablespoons sugar
1 tsp. teaspoon vanilla
300 gr. cherries, fresh or canned (drained)
some sugar crystal
First remove pits from cherries with a special tool or drain the compost if you do not find fresh. Sprinkle fresh cherries (without seeds) with a little sugar and stir.
Make the cookies: Preheat the oven to 170ºC in air and lay two levels pans with parchment paper.
Whisk together the eggs and sugar in a bowl. Add the melted chocolate and oil, continuing to beat until becomes homogeneous. Mix the flour and the chocolate drops.
With a teaspoon take mixture from bowl and dish pans round pieces in a short distance from one another. Bake about 12 minutes, until the cookies make a nice crust.
Remove from oven and allow them to cool before detach them from the baking sheet. Do not over cook them beacause they will become too crispy.
You make the cream: Beat the cheese with cream, sugar and vanilla until a thick mixture is created.
You make the cake: Take a round platter and use half of the cookies. Cover the platter with half cream which spread evenly on top, decorate with some cherries and a little grated chocolate, continue with the remaining cookies and the rest of the decorating cream with the remaining cherries and grated chocolate.
